Made some "BURST OF ENERGY" Bites tonight. A VERY
healthy no bake treat CHOCK FULL of "good for you" ingredients!
No butter, no oil, no flour, no eggs, no sugar!
1 cup old-fashioned oats
1/2 cup natural peanut butter
1/4 cup ground flaxseed
1/4 cup sunflower seeds
1/2 cup dried cranberries
1/3 cup raw honey
1 tsp. pure vanilla extract

Stir all ingredients together in a medium bowl until
thoroughly mixed. Let chill in the refrigerator for half
an hour. Once chilled, roll into balls about 1″ in
diameter. Store in an airtight container and keep
refrigerated for up to 1 week.

Note: Feel free to change recipe by using almond
or cashew butter in place of the peanut butter, and
substitute dried cherries, raisins, chopped dates or apricots
for the dried cranberries. You can also add chopped almonds,
pecans or walnuts in place of the sunflower seeds. Dark or
semi-sweet chocolate chips can also be used in this recipe.
