Pumpkin Maple Pancakes (My Own Recipe)


2 cups unbleached all-purpose flour
1 tbs. wheat germ (optional)
4 tsp. baking powder
1/2 tsp. sea salt
1 tsp. cinnamon
1 1/2 cups rice or soy milk
2 tbs. maple syrup sugar
1 tsp. pure vanilla extract
4 eggs, slightly beaten
1/4 cup butter, melted 1 cup canned pumpkin

DIRECTIONS:
Mix together dry ingredients. Combine milk,
maple syrup, vanilla, eggs, butter and
pumpkin. Stir into dry ingredients until just
blended. Pour about 1/3 cup onto a hot
griddle. Cook until bubbles form, turn and
cook other side, cook on low to medium heat
to ensure the inside of pancakes cook.
Serve with butter and maple syrup if desired.
These are very yummy pancakes!!! =)
