My Niece, Christina Making Pizzelle Cookies






6 eggs

1 1/2 cups raw or granulated sugar
1 cup butter, melted, and slightly cooled
2 tsp. anise flavoring or pure vanilla extract
3 1/2 cups unbleached all-purpose flour
4 tsp. baking powder 
In a large bowl; whisk eggs and sugar until smooth.
Add butter, and anise or vanilla extract, mix well.
Add flour and baking powder into the wet ingredients,
stirring until well blended (dough will be sticky).
Brush a little butter onto the pizzelle cooking surfaces,
then preheat pizzelle maker or iron. Drop batter by
tablespoonful onto pizzelle maker, close the iron
and cook according to manufacture’s instructions,
(takes approximately 30 – 40 seconds for cookies
to cook). Allow pizzelle’s to cool on wire racks, then
store in airtight containers.
Makes 40 – 50 pizzelles.  
 
NOTE: The pizzelle's pictured are two different
batches, one using raw sugar, and the darker batch
we used Organic Coconut Palm Sugar.
