Applesauce Cranberry Walnut Cake

1/2 cup butter, softened
2 cups sugar
2 eggs
1 1/2 cups applesauce
1/2 cup water
2 1/2 cups all-purpose flour
1 1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 1/2 tsp. ground cinnamon
1 cup frozen cranberries, unthawed
1/2 cup chopped walnuts

Preheat oven to 350°. Grease a 13x9 inch
baking pan with non-stick cooking spray and
set aside. In a large bowl beat together butter
and sugar, then mix in eggs, applesauce and
water. Stir in flour, baking soda, baking powder,
salt and cinnamon. Gently fold in walnuts and
cranberries. Pour batter into the pan and bake
for approximately 60 minutes, or until a toothpick
inserted into the center of the cake comes out
clean. Allow cake to cool in pan, slice and serve.

Applesauce Cranberry Walnut Cake (REMIX)
1/2 cup butter, softened
2 cups coconut palm sugar
2 free range eggs
1 1/2 cups unsweetened organic applesauce
1/2 cup filtered water
1 cup unbleached all-purpose flour
1 1/2 cups whole wheat white flour
2 tbs. flaxseed meal
3 tbs. hemp seeds
1 1/2 tsp. baking soda
1 tsp. non-aluminum baking powder
1 tsp. Pink Himalayan salt
1 1/2 tsp. organic ground cinnamon
1 cup frozen cranberries, unthawed
1/2 cup chopped organic walnuts

Preheat oven to 350°. Grease a 13x9 inch
baking pan with non-stick cooking spray and
set aside. In a large bowl beat together butter
and sugar, then mix in eggs, applesauce and
water. Stir in flours, flaxseed meal, hemp seeds,
baking soda, baking powder, salt and cinnamon.
Gently fold in walnuts and cranberries. Pour batter
into the pan and bake for approximately 60 minutes,
or until a toothpick inserted into the center of the
cake comes out clean. Allow cake to cool in pan,
slice and serve.

NOTE: I baked my cake in a tube pan, then topped with
a cream cheese frosting. You can leave cake unfrosted,
or add your favorite frosting or glaze to the cake once
it has completely cooled. Also feel free to replace the
cranberries with raisins, chocolate chips etc.

Frosting:
1 (8 oz.) pkg. cream cheese, softened
1 stick butter, softened
3-4 tbs. Slim Sweet or sugar
1 tsp. vanilla or almond extract
3 tbs. rice milk or milk

In a bowl, mix all ingredients together until
It forms a smooth frosting. Add more rice
milk if needed until you reach desired
consistency, then frost top of cake.
