Refreshing Lemon Granita

1 cup spring or filtered water
2/3 cup raw sugar
2/3 cup fresh lemon juice
2 teaspoons grated lemon peel


Instructions:

In a small saucepan, bring water and sugar to a boil.
Cook and stir until all the sugar is dissolved. Remove
saucepan from heat and stir in the fresh lemon juice.
Transfer mixture to an 8 - inch square baking dish and
cool to room temperature. After mixture comes to room
temperature freeze for 1 hour, then take out and stir with
a fork. Freeze for 2-3 hours longer, or until mixture is
completely frozen. Make sure to stir every 30 minutes
during that time. Just before serving, scrape and "fluff"
granita with a fork. Spoon into dessert dishes, garnish
with grated lemon peel, and a fresh mint leaf, if desired.
Serve immediately.
