Sour Cream Apple Muffins

1 cup unbleached flour
1/2 cups whole wheat flour
1/2 cup oat bran
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon sea salt
2 teaspoons cinnamon
1 cup sour cream
1/3 cup sunflower or safflower oil
2 eggs
3/4 cup packed brown sugar
2 teaspoons pure vanilla extract
1 apple, peeled cored and diced
1/2 cup chopped walnuts
Raw Sugar (optional)

Preheat oven to 350 degrees and grease a 12 cup
muffin tin. In a large bowl, whisk together flours, oat bran,
baking powder, baking soda, salt and cinnamon. In a
separate bowl, whisk together sour cream, oil, eggs, brown
sugar and vanilla. Add wet ingredients to dry ingredients
and stir just until combined. Fold in apples and nuts, divide
batter between the twelve muffin cups and sprinkle tops of
muffins with a little raw sugar if desired. Bake for 20-25
minutes or until a toothpick inserted in the center of a
muffin comes out clean.
